Is it possible to hide or remove the Assistant option 'Image Search and Help Tool' from the left pane?

are you asking that because it the Wikimedia search isn't working for you?
If you email me directly I'll respond in more detail but the short answer in your case is that as you don't have AI enabled or any keys for Pexels or Pixabay the Wikimedia option doesn't work unless your user account also has the AI role assigned. That doesn't mean AI has to be enabled but at the moment the role is needed even for Wikimedia search to work. I can disable Wikimedia on your install so that the search option doesn't show but email me directly to discuss that.
