When I use script in a text panel to use an image, it always looks like:
<img src="http://localhost/xertetoolkits/USER-FILES/17-guest2-Nottingham/media/knoppen.JPG"/>

When I'm looking at the script, some of these script in the asame file are changes like:

see image. Here it is changed to readable script.

Why is XOT doing this? When I want to copy paste, it is much more difficult to find parts of the script.

Because the HTML has to be put inside an xml file. And you cannot use < and > inside an xml file, so they are 'escaped' as < and >

I suppose not exactly the same link, but a link in another place in the LO

Some items are stored in a CDATA section, and don't need escaping.

Frankly, it is not such a good idea to copy and paste and edit the .xml files directly. Hopefully you won't have a need anymore in the next release with the new editor.
