Can anyone tell me if it is possible to demonstrate a XOT project I have created at a seminar without internet access?

yes just export, extract the zip and launch the index.htm file. However a few notes:

1. Be sure to extract the zip. If you simply double click and open the index file it won't work.
2. If using IE watch for a prompt to allow blocked content. Depending on settings Chrome may not display a prompt and may not work.
3. Obviously any page types that require internet access e.g. YouTube or embed content etc will not work unless you have internet access.
5. If you are using the Flash Player export version you may need to add the path to Flash Player Security settings.
